Jordi Esquena has presented the work “Water-in-Water Emulsions and Microgels by Cloud Point depression in surfactant + gelatin mixtures” which demonstrates that W/W emulsions can be prepared in polymer-surfactant mixtures. This finding opens potential new pathways for the development of other novel W/W emulsions with tunable properties. The development of new water-in-water systems, which allows the formation of chemically crosslinked microgels, might have great potential for applications in drug delivery and food technology.
